Happy Lunar New Year! Recipe: Char Siu Duck Breast / Spicy Orange BBQ Sauce
Happy Lunar New Year's Eve! To celebrate the holiday this week, we're sharing a recipe from Slow Food Seattle's own chef Varin Keokitvon. Enjoy this recipe for Char Siu Duck Breast & Spicy Orange BBQ Sauce!
Char Siu Duck Breast & Spicy Orange BBQ Sauce
4-6 ea farm duck breast
brine:
2 oz honey
2 oz brown sugar
2 oz lite soy sauce
2 oz hoisin
1 tbl salt
2 tsp onion powder
1 tsp garlic powder
1 tsp 5spice powder
.5 tsp white pepper ground
.5 tsp msg (optional but delicious, sorry)
Procedure:
1. Mix all ingredients of brine. Brine duck for 6-8hours or overnight.
2. Roast/broil/grill duck until preferred doneness. Rest 10min. Slice. Serve
Spicy Orange BBQ Sauce
1oz canola
1 ea large onion - diced
3 ea garlic clove - minced
1 tbl ginger - minced
1 tsp fennel seed
.5 tsp clove
.5 tsp allspice
1 tbl paprika (pimenton de la vera dulce is best)
1 ea habanero - or jalepeno if you prefer less spicy
4 oz brown sugar
4 oz rice vinegar
4 ea large orange - peeled, deseeded, chopped, and zested
salt - as needed
Procedure:
1. Combine first 8 ingredients in saucepot and cook on medium-low heat until onions are soft and lightly caramelized (20-30min).
2. Add remaining ingredients and cook another 10min. Transfer all ingredients to a blender and process until smooth.
3. Adjust seasoning. add more vinegar, sugar, orange juice, spice to your preference.
